Use this fact sheet to assess your water use, waste generation and energy efficiency. Assessments should be performed by managers or those responsible for the environmental performance of bars, restaurants, nightclubs and general hospitality areas. Ideally, these should be performed annually, or after renovations have taken place. In the case of very large premises where auditing every item is not feasible, choose a selection and take averages.
